Recipe: 'Greek Rub' Butterfly Chicken

This is a great one for that first night on the road as it can be pre-prepped at home and put straight onto the camp grill. So easy!


  • 1 family sized chicken 

For the rub

  • 2 lemons, cut in wed
  • 1 bunch parsley
  • 3 garlic cloves 
  • Dried Oregano 
  • Salt & pepper
  • Oil

Equipment Needed:

  • Chopping board 
  • Sharp knife 
  • Large plastic container 
  • Camp grill 


  1. Roughly chop parsley and garlic and combine with oil, lemon jice, dried oregano and salt & pepper in a bowl. *Keep squeezed lemons once juiced.*
  2. Place chicken into an air tight container or bag. Add the rub mixture + squeezed lemons and marinate for 12-24 hours. 
  3. Cook on camp grill. serve with veg of choice (we tin foil corn + potatoes and campfire pumpkin). *Tip: use corn with husk and soak prior to wrapping in foil. This will help with the steaming process.
